4 heaping cups grated apple (or summer squash)
2 cups chopped walnuts
2 cups all purpose flour
2 cups sugar
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
3/4 cup vegetable oil
Grease and flour 2 9-inch cake rounds and preheat oven to 350 degrees.
Mix shredded apples with sugar and spices.
Add eggs and oil, and stir well.
Mix in flour and nuts; stir until blended, and pour into prepared pans.
Bake at 350 degrees for 1 hour (or until knife inserted in center comes out clean).
